Merry and Bright...

Remember how I told you about my sultry love affair with eggnog?  Even though I've been in weight loss mode, the love affair has not ended.  I love it just as much this year as I did last year!  I'm just being a lot more careful about how much I consume.  In honor of that love affair, I'm once again sharing my Merry and Bright Homemade Eggnog Recipe...

EASY EGGNOG
3/4 cup sugar
3 1/2 cups of 2% milk
1 teaspoon ground Cinnamon
dash of nutmeg
6 egg yolks
1 pint of heavy cream
1 cup of Rum (optional)
1 teaspoon Vanilla Extract (optional)


In a saucepan, combine milk, cinnamon, vanilla extract and nutmeg and bring to a slow (and I do mean slow) boil.  Remove the saucepan from heat and set aside.  Combine egg yolks and sugar with a hand mixer until well blended (when the yolks are an ivory color, you can stop).  Slowly pour this mixture into the saucepan.  Add the pint of cream.  Return the saucepan to low heat and continue stirring until a creamy texture is formed...about 5-7 minutes.  NOTE:  heat must be low or you will scramble the eggs and curdle the milk.  Pour into container and refrigerate overnight.  Mix with rum when serving, if desired.  Sprinkle with cinnamon or nutmeg.....or both or neither!

Eggnog is one of those little pleasures we have to take in life. Oh, and so are those Red Velvet Crinkle Cookies...I didn't burn this batch either! :-)



Sure, I will do a few more squats, jumping jacks, lunges and crunches to work this off, but every sip is totally worth it!

    I, too, have a love affair with eggnog, but can only drink small amounts at one time since it is so rich. I love the Borden's eggnog (store bought). Have a wonderful Christmas... travel safely to Alabama.

    1. It is such a wonderful tasting beverage. The first time I had ever had any was last Christmas and it was purchased at Wal-mart...Southern Comfort's Vanilla Spice.     1. Thank you so much! Oh, you should try it! BUT be careful…it is addictive. The hubster and I had never had eggnog until last Christmas…we were hooked! And it packs on the pounds…well, when you drink a carton a day….LOL….that’s why I had to learn to make it…so I wouldn’t drink so much! :-) Merry, merry Christmas…love and hugs to you!!

  8. While I really love eggnog, I try not to drink it because of the calories but I have been baking with it! I have a recipe for eggnog cutout cookies and eggnog bread with frosting....my oh my!   10. We are sisters, Benita. Or maybe partners in crime. I also have a sultry love affair with eggnog. Instead of drinking it "straight" though, I now drink it in my lattes. I find it to be the best of both worlds, eggnog and coffee ;) Enjoy the season!

  11. Benita, this recipe looks amazing! I too have an eggnog love affair going on right now...well every Christmas really...and being an East Coast Gal it usually involves Rum...and this week that drink has turned into my 'Magic Ankle Juice'...it really does make a broken ankle feel better! ;)

    1. Girl, it is fabulous and you will love it! It was so difficult for me to stay away from this stuff over the holidays. I drank small amounts, but really enjoy it all through the year. During the winter it is cozy-tasting and during the warm months it is refreshing and cool. Just can't go wrong!! How is your ankle??? Hope you behaved over the holidays!!
