A Chili Recipe, Even Though...

...it's 100 degrees outside!  Well, maybe not 100, but pretty darn close....it is in the high 60s and low 70s and that is NOT Christmas weather...at all!  If I wanted warm weather for Christmas, I would move to Hawaii!  UGH!

A few weeks months ago, the hubster emailed me a recipe for White Chicken Chili that he found and wanted me to make.


I had been putting it off, but finally decided to go ahead and make it this past weekend.  He had been traveling and I thought it would be a nice treat for him.  It was easy to make and he loved it! And since he enjoyed it so much, I thought I would share it with you!  It is a recipe from the Bush Beans website.

CLASSIC WHITE CHICKEN CHILI (from bushbeans.com)
  • 1 can (16 oz) Great Northern Beans
  • 1 can (14.5 oz) chicken broth
  • 1 Tbsp olive oil
  • 1 medium onion, finely chopped
  • 1 can (4 oz) chopped green chilies, drained
  • 3 Tbsp all-purpose flour
  • 2 tsp ground cumin
  • 1 1/2 cup finely chopped cooked chicken breast
  • Shredded Monterey Jack cheese (optional)
  • Sour cream (optional)
  • Salsa (optional)
In a large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot.  Garnish with cheese, sour cream and salsa, if desired.


I made an adjustment, or two, as always.  Since the hubster likes his chili thick, I only used 1/4 can of the chicken broth.  You can add or reduce this amount to your liking.  I added the chicken when I added the broth so that the flavors could blend longer.  I also added some garlic powder...a few shakes.   And I didn't use a skillet.....I used one of my large sauce pans, but again, use what you prefer.  I garnished with some chives and paired this chili with some yellow, sweet cornbread, which complimented the chili perfectly!


Yes, it was that sweet, "yeller" stuff the hubster has complained about...but he ate every bite! :-)

  1. This recipe sound's made to order for me Benita, yummmmmm !!! I cut out red meat completely and have been making meal's I can reheat or freeze since it's usually just me. I have all the ingredients except the green chilies.

    1. Thank you so much! This one will freeze and reheat easily! The hubster loved it and I had to make him stop eating so that I could take a photo of this before it was all gone..LOL. I prefer fish, chicken and pork, but will have red meat occasionally. You will enjoy this recipe! Hugs!!!

    1. Exactly! This one was sweet and didn't need the sugar, but regular cornbread needs just a little.

  9. I'm craving this now!! I know I have some similar recipes but this looks really fast. Love that you had cornbread with it, I make it with clili a lot but never thought of it with chicken chili. I like to throw some cheddar cheese in the cornbread. Wow, I'm so hungry now!!

    We were supposed to have a warm up but someone was misinformed..ha! 30's and windy. Well it's better than 10 below!

    1. It is really fast and really easy! In under 30 minutes it is done and on the table, including the cornbread! I wouldn’t have thought to put chicken in the chili until the hubster found this recipe…and just kept after me to make it. He loved it and I think you could definitely mix some cheese into the cornbread. Or have some cheddar garlic biscuits with it….okay, now I’m hungry….LOL Love the colder weather! We have finally gotten a small reprieve and I’m with you…no to the 10 below!!! Hugs chickie!!

  10. Move to Hawaii – yeah right – I call your bluff! That would involve air travel and we all know you are not going to subject yourself to that! LOL We had a warmer fall but are now getting colder weather – tomorrows low is –25F with the wind chill and we got about 5 inches of snow in the last wk so I have plenty to share and will be sure to send some of both down south to you. In the meantime if you can’t beat em join em - buy a snow cone machine and sprinkle them liberally with your Peppermint Sugar! Lol

    1. Exactly!!! And there is no way in heaven or hell I'm flying across that much water...I would have to be completely sedated and carried onto the plane on a stretcher...or a straight jacket! Please send some snow and cold weather this way...I'm really against these warmer temps for the holidays. It is supposed to be almost 70 on Christmas...YUCK!! LOL...I can do that!!
